What to do with extra Cilantro … Creamy Cilantro Lime Dressing !!

Cilantro has an acquired taste not everyone likes it and some say it tastes like soap and some find it a delicious herb to add to salads, soups, tacos, etc. I enjoy Cilantro and buy it often. But sometimes you end up with so much Cilantro you don’t know what to do with it all. A few days ago there was a sale on Cilantro of 5 bunches for $1. So being I loved Cilantro I jumped in on this deal and bought 5 bunches. I used one for DIY street taco night and another for a salad night. But I still had three(3) large bunches left and they were starting to go bad.

When storing Cilantro you untie the wire band around them, pluck out any yellow or bad leaves, then plop the bunch of Cilantro into a glass with about a ½” or inch of water at the bottom, and cover the glass with a plastic bag. This keeps the Cilantro fresh for longer period of time. But I still had way too much Cilantro to even know what to do with them. So I went on another one of my culinary experiments. I took whatever I had in my fridge to make something with the bunches of Cilantro. What I came up with actually was very delicious !! (nDn”)

So this is what I came up with. Upon experimenting with my Cilantro bunches I created a Creamy Cilantro Dressing/Marinade that is great on Salad and over fish or chicken. Now keep in mind the recipe is not exact as most of my CR8TiV culinary experiments aren’t pre-measured or measured at all. Just winging it so my ingredient amount is just a guess-timate of how much I actually put in. So adjust according to your tastes.

Ingredients :

[] 2 bunches of Cilantro : Washed with Stems and all

[] 2-3 Tablespoons of Vegetable oil : Can use Olive oil

[] 2 Teaspoons of Pepper

[] 1 Teaspoon of Tajin : A Chili Lemon seasoning

[] 1 Teaspoon of Salt

[] 1 Teaspoons of Garlic Parsley Salt

[] 3-4 Tablespoons of Mayonnaise : Probably about ¼ cup amount

[] 2-3 Tablespoons of Water

[] 1-2 Cloves of Garlic

[] 1 Lime

STEP 1 : Take your Food Processor *probably can use a Blender* and put one bunch of Cilantro in and pulse into a fine puree or mush. You can add a few tablespoons of water to help the food processor/blender along. Take a Spatula and scrape down the sides and add in your 2nd bunch of Cilantro. *Note : this is alot of cilantro going in*

STEP 2 : Open your Food Processor/Blender and add in the Salt, Tajin, Black Pepper, and Garlic Parsley Salt. Put the cover back on and give it a quick whirl.

STEP 3 : Turn your Food Processor on and drizzle in the oil and water til it’s all incorporated.

STEP 4 : Open your Food Processor/Blender and add in the Mayonnaise and Garlic cloves

STEP 5 : Put the cover back on and let everything blend up real well and everything has a creamy consistency.

STEP 6 : Taste ! Grab a spoon and give it a taste. Now is the time to add anything that it might need like more salt, pepper, etc.

STEP 7 : Once it tastes perfect to your taste buds … take your spatula and scrape everything into a bowl or plastic container. Give it a good stir to make sure everything has been mixed together well.

STEP 8 : For a final added kick cut a lime in ½ and squeeze in ½ of the Lime into the Creamy Cilantro mix. Give it a stir and taste. The lime I had was pretty small so I used the whole lime.

\(n D n)/ TADA !! A wonderful Creamy Cilantro Lime dressing which you can pour over salads or use as a marinade on fish, chicken, and probably even beef. Tonight I’m gonna take some a pour it on over some Pasta. This MYT CR8TiV culinary experiment was another successful one. This dressing/marinade/sauce is so versatile and can be used in many different ways from a dip for chips, spread on sandwiches in place of regular mayo, drizzled over hot baked potatoes, mixed into mashed potatoes, drizzled over a salad, etc. It’s just so delicious !!

So next time you have an abundance of something and not sure what to do with it before it goes bad. Think CR8TiV-ly and experiment with things you have in your fridge/pantry and who knows what you create might be SUPER delicious and remember don’t forget to share your creations with friends and loved ones. Who knows you might start a chain reaction where your culinary experiment is sharing from person to person and becomes a recipe loved by all !
